Almost Quicker than a Pot Noodle

You know, there's one food that I used to love that I really don't understand anymore: Pot Noodles (or Cup Noodles, if you're from the US). What was so appealing, at about age 13, of a plastic pot of dehydrated noodles, textured soya pieces and powdered flavouring that was always disappointing once it was actually made? Maybe it was the ease of boiling the kettle, pouring the water in, swirling it a couple of times and having something hot to eat.

Well if that was the appeal, I can definitely do better than that now! This flavour packed dish takes literally five minutes to make from scratch, and it's definitely healthier and tastier than a Pot Noodle.

Oriental Prawn and Noodle Broth


Ingredients
One portion whole wheat noodles
One clove of garlic
250ml vegetable stock
About 100g king prawns
A few button mushrooms, sliced
A handful of spinach
Soy sauce
Grated fresh ginger and some sliced chili pepper (optional)

Heat a tsp of olive oil and saute the garlic and mushrooms until fragrant. Add the vegetable stock, soy sauce and ginger (if using), then pop in the noodles. Cook for as long as the directions on the packet say (mine took three minutes), adding the prawns a few minutes before they are done. Season with black pepper - you shouldn't need any salt as the soy sauce is fairly salty in itself. Stir through the spinach and ladle, piping hot, into bowls, sprinkling with a little fresh chili if desired.

  1. I've never heard of the term "pot noodle". 'm sitting here envisioning a noodle make of marijuana. ha!
    Your dish looks MUCH more tempting than a "pot noodle", yes, bu tI don't lie, I've had those pot noodles before, and loved them! I used to add my own extra ingredients in them (like chicken and extra vegetables). Your shrimp look outstanding.

  5. yum! looks like somthing you might get from wagamama's. It looks like a lovely, warm and cosy snack you might have on cold winters evening sitting infront of the tv snuggled up in at blanket :)

  6. This made me giggle! I can't believe they are called Pot Noodles...but I suppose us calling them Cup of Noodles is funny to you :-)

    I love your homemade version, it looks MUCH better than that styrofoam cup, despite what my inner 13 year old is saying (she doesn't know what she's talking about)

  12. Well of course yours looks way better and isn't jam packed with sodium! Looks delish! Confession: I had cup noodles (instant noodles) alot. It was the best thing EVER! Was super good with mixed vegetables. I'm sure noodles are a part of the college experience! :-)

  13. Have you ever made your own pasta? It makes insta-pasta a non-option. The fresh oriental broth looks mouthwatering. Gotta try this soon!
