Lemon Basil Chicken

Sometimes simple flavours and recipes can turn out best. This is a really light, delicate way to prepare chicken with only a few fresh ingredients, and it was delicious paired with the bold Mediterranean flavours of the ratatouille rice recipe I posted the other week.

Lemon Basil Chicken
Serves two.


Ingredients
2 chicken breasts
a handful of fresh basil, roughly chopped
juice of half a lemon
a garlic clove, finely chopped
a good pinch of salt and pepper
olive oil


Start by squeezing the lemon juice into a bowl or jug. Add the chopped basil, garlic, and the salt and pepper and mix well.


Next, pop the chicken breasts onto a chopping board and cover the with clingfilm or plastic wrap. Beat them gently with a rolling pin until they are about 1cm thick.


Spread the marinade onto both sides of the chicken, letting it absorb in the fridge for an hour if you have the time, but don't worry if you don't - it's still delicious!


Heat a tablespoon of olive oil in a pan and add the chicken breasts, cooking for about two minutes on each side.


Check that they are cooked through by cutting into the middle of one with a knife, and checking that the flesh is white all the way through.


To serve, top with a little fresh basil and serve with ratatouille rice - it's a great combo!

  1. I couldn't agree more about simple recipes! My favorite way to roast a chicken is just rub it with a lot of olive oil and add salt and pepper!

  5. Basil makes everything better! I guess my simplest meal would have to be pasta with a bottled sauce. I know that's cheating but Costco's Kirkland brand has a delicious bottled pasta sauce that is outstanding, and well priced.

  7. Don't you love it when recipes are simple yet taste fab! Love the sound of this meal! Eggs are my favorite simple meal- there's so many ways to cook 'em up yet they all barely require much time at all!

    1. You're right, there's so many different ways to eat eggs. Omelette, frittata, poached, scrambled... I'm actually uploading a really yummy huevos rancheros recipe soon that I ate about four times last week :)

  9. Simple is always best in my opinion! Sometimes bringing too many flavors together makes them all seem kind of dull. Or the opposite can happen and all the flavors conflict too much! You can't fail with simple though. My favorite simple recipe is roasted veggies with salt and pepper!

  12. simple chicken recipes are great! I always make this chicken when I'm home alone but one of my favorite quick recipes is pasta, I always try new combinations such as hot links and black olives with a cream sauce :)
