I honestly can't believe that another term at university is almost over, either I've stepped into a time warp or it's because I'm so busy at the moment. I edited my first ever Health and Food section of the student newspaper on Monday, which was exciting but definitely a challenge - especially using the Indesign software. I spent about 15 minutes trying to make the text fit around one picture, only to press something and have it all move over the page! It's all done now, though, and I can't wait to see it in print.
I snapped a picture of this simple spinach and mushrooms quinoa side dish that I had tonight, but I don't think it'll be going in the paper. Not too many students I've met here cook with quinoa, except one of my flatmates, who loves the stuff almost as much as me. Clearly it was fate that we were put together!
Spinach and Mushroom Quinoa
Serves two as a side or one as a main.
250ml vegetable stock
two generous handfuls of spinach
one spring onion
salt and pepper
Put the quinoa and the stock in a pan and bring to the boil, then cover and reduce to a simmer for ten minutes, when all the liquid should have been absorbed. Saute the garlic and spring onion with cooking spray or a tsp of olive oil until fragrant, then add the mushrooms and cook until soft. Add the cooked quinoa and stir in the spinach until it wilts. Season well with salt and pepper and serve.
