Just got back from another holiday that I went on with some girlfriends to Kos. We had a great time but one teeny tiny problem... we had mice in our room! I also sprained my ankle on the last night, which meant I was a complete nuisance on the flight home. Luckily, the staff were really nice about it and gave me three seats at the front so I could keep it elevated and iced. It's almost healed now though, which is just as well, because I've just signed up to do a 10k run on November 18th! Although my internship placement finished last month, Zest have offered me the chance to do a challenge blog, which I'm super excited about and working on right now. Believe me though, nothing could challenge me more than having to run for any amount of time longer than a minute. Even though I gave running a go earlier this year I'm still awful at it, so I think pressure and deadlines are the way forward. I've persuaded my boyfriend to sign up as well, so at least I'll have some moral support.
I've been meaning to post this recipe for ages: my version of Huevos Rancheros. I know there's loads of variations on this Mexican dish of fried eggs served over a tortilla, but this is my favourite way to have it. Really chunky and really saucy!
Huevos Rancheros a la Sarah
Serves one.
1 small red pepper, diced
1/2 courgette, diced (optional)
1 small onion, finely chopped
1 clove of garlic
about 300g passata or chopped tomatoes
1 tbsp olive oil
salt and pepper
1 tsp paprika
1/2 tsp ground cumin
pinch of chili powder (optional)
1 wholewheat tortilla wrap
In a medium/large frying pan, heat the olive oil and fry the onion and garlic until soft and fragrant. Add the red pepper and courgette and cook until soft. Add the passata/chopped tomatoes, paprika, cumin, chili powder (if using) and the salt and pepper and mix well. Simmer until the tomatoes have softened down and thickened into a sauce. Make two holes in the mixture and crack the eggs into them. Cook for 7-10 minutes, or until the eggs are as set as you like them. Heat a wholewheat tortilla wrap in another frying pan, the microwave, or the oven, then serve the eggs and sauce over the wrap, and tuck in!

For a 10k you just need to get out there and run, preferably now :) Start small and you will be amazed how quickly you'll build up to a longer distance.

DeleteSorry about your ankle but well done on signing up for the 10k!! My only advice is to build up slowly...too much too fast is a recipe for disaster! Will it be your first time running this distance?

ReplyDeleteSorry about your sprain, hope you feel better soon. Running outside (not on a treadmill) and running speed increments helps me to get up to a longer distance in a shorter time. Take care,and good luck,
