Time flies when you're... forgetting to write about it!


I seem to use the words, ‘I know you probably all think I’ve disappeared but…’ on this blog an awful lot. So this time I’m not going to apologise for my long absence from the blogging world, but just give a run-down of what I've been up to. Since I last blogged I’ve moved into a new house, finished a whole term at university, got a new job, run a 10k and written a blog for Zest Magazine about it, started to get a bit more work as a freelance writer (yay!), come home for Christmas and done a lot of cooking! I just haven't actually sat down to write about it.


Running the 10k was surreal; just ten weeks ago I never would have thought I would be able to do it, but I'm so glad that I did. Luckily the weather was amazing, and not too cold - otherwise I might have been tempted to stay snuggled up in bed. Everyone was really lovely, but almost all the runners were seasoned pros, as you can tell by the serious faces surrounding me and Charlie as we crossed the starting line.


So to ease me back into food blogging after my long break, I’m going to share the easiest dish I've ever posted. It's so easy I'm not even sure it should be called a recipe, but still looks pretty on a Christmas buffet table!

Marinated Prawn Canapés
(makes two small dishes holding 20 canapés each)


Ingredients:
500g king prawns, cooked and peeled
half a lemon, juiced
1/2-1 tsp honey, or to taste
black pepper
a bunch of fresh flat-leaf parsley, chopped
cocktail sticks, to skewer

Combine all ingredients in a bowl and leave to marinate for an hour or two. Skewer two prawns onto each cocktail stick. Arrange nicely on a dish.


And that's it! The perfect quick-but-impressive-looking recipe to fill up a buffet table at a party without taking you ages to make, and healthy too. What's not to love?
